I am dedicating this blog post and recipe to my friend Kerri, who requested a banana chocolate chip cookie recipe. I’ve been researching and testing this recipe for awhile and just couldn’t quite “get there” on how to make it easy and fast…and flavorful. I tested several recipes and then realized that I had already “created” this recipe! This recipe is a spin on my “Lightning Fast Banana Bread Cookies”. The recipe is the same – you just replace the chopped walnuts with chocolate chips! You can also replace them with raisins and a dash of ground cinnamon! They’re delicious, easy, and most important…very flavorful!
Lightning Fast Banana Chocolate Chip Cookies
2 overripe bananas
1 cup rolled oats
1/4 cup mini chocolate chips (regular can work in a pinch too)
Mash the 2 bananas in a bowl with a fork or potato masher.
Add the oats and chocolate chips and stir to combine.
Drop tablespoons of batter onto a parchment paper lined cookie sheet.
Bake at 350 degrees for 12-15 minutes.
Makes about 12 cookies.
